- 1 Cup Basmati Rice (washed and soaked)
- 2 Cup Water
- 1 Tablespoon Ghee or Oil
- 1 Piece Bay Leaf
- 1 Inch Cinnamon Stick
- 3 Piece Clove
- 2 Piece Cardamoms
- 1 Teaspoon Cumin Seeds
- 1 Piece Onion (sliced)
- 1 Teaspoon Ginger-Garlic Paste
- 1 Piece Green Chilli
- 0.5 Cup Carrots (chopped)
- 0.5 Cup Beans (chopped)
- 0.5 Cup Peas (chopped)
- 0.5 Cup Bell Peppers (chopped)
- 1 Piece Tomato (chopped)
- 0.5 Teaspoon Turmeric Powder
- 1 Teaspoon Garam Masala
- Salt
- Coriander Leaves
- Mint Leaves
Cooking Instructions
Take a pressure cooker and heat ghee or oil in it. Add in cumin seeds, bay leaf, cinnamon, cloves, and cardamom. Saute it for a while.
Add in sliced onion and saute till they are golden brown. Then, add ginger garlic paste and green chilli. Cook it properly.
Add in all the chopped vegetables and let them cook for a while. After that, add tomato, turmeric, salt, and garam masala.
Add in the soaked rice and mix gently. Once done, pour water and cover the pressure cooker. Pressure cook it for about 2 whistles.
Let it cool down, fluff with fork and garnish with coriander and mint leaves.
Serve the delicious vegetable pulao with plain curd, raita, or dal to take your meal to the next level.
