Ingredients

  • 1 Cup Green Lentils
  • 2 Piece Beetroot (peeled and cubed)
  • 1.5 Cup Feta Cheese
  • 2 Tablespoon Olive Oil
  • 1 Tablespoon Lemon Juice
  • Salt
  • Pepper
  • Parsley

Cooking Instructions

Cook Lentils: Take a pot, add water to it and bring it to boil. Add in washed green lentils to it. Cook for about 20 minutes. Drain and set aside.

Roast Beetroot: Preheat your over. Toss in the beetroot cubes in olive oil, salt, and pepper. Roast them until they are tender.

Prepare Dressing: Take a small bowl, add in olive oil, lemon juice, salt, and pepper, Mix everything together.

Add In Everything Together: Take a large bowl, add in the cooked green lentils, feta cheese, and roasted beetroot. Drizzle the dressing and toss gently.

Garnish And Serve: Sprinkle fresh chopped parsley on top of the salad for an added flavour. Serve it and enjoy.
